Piaparan a manok is a traditional Maranao dish made with palapa (stir-fried shallots and aromatics), bumbu paste, and coconut milk. Give it a playful twist by serving it a la Mexican-style tacos. Place the piaparan chicken flakes on warm tortillas, add a zesty tomato salsa, and finish with a creamy lime-garlic dressing.

Preparation

  1. Prepare the Palapa

    10 minutes
    • Combine all ingredients in a food processor. Pulse until coarse.
    • Sauté mixture in a pan until cooked and a paste is formed. Set aside.
  2. Make the Bumbu Paste

    10 minutes
    • Combine all ingredients in a food processor. Pulse until coarse. Set aside.
  3. Cook the Piaparan a Manok

    30 minutes
    • Season chicken with Knorr Liquid Seasoning and Knorr Chicken Powder. Marinate for 10 to 15 minutes.
    • Heat a pot and add oil. Sear both sides of the chicken until brown. Set aside.
    • In the same pan, add more oil. Sauté bumbu paste and palapa until fragrant.
    • Add water. Scrape the bottom of the pan to loosen stuck bits.
    • Add coconut milk, Knorr Chicken Broth Paste, and brown sugar. Mix well.
    • Add seared chicken back to the pan. Bring to a boil and simmer, covered, until the chicken is fully cooked and tender. Set aside to cool.
    • Remove chicken skin and shred meat. Add remaining sauce to keep it moist. Discard bones.
  4. Make the Tomato Salsa

    10 minutes
    • Combine all ingredients. Set aside in the chiller until ready to use.
  5. Prepare the Lime Garlic Dressing

    10 minutes
    • Combine all ingredients. Set aside in the chiller until ready to use.
  6. Assemble the Piaparan Chicken Tacos

    5 minutes
    • In a hot pan or griddle, warm tortillas on both sides.
    • Add shredded piaparan a manok and top with tomato salsa.
    • Drizzle lime garlic dressing on top. Serve immediately.
