Preparation

  1. Make the Pulled Roast Beef

    165 minutes
    • Combine all ingredients, except the beef short plate, in a blender. Process for 10 to 15 seconds or until smooth.
    • Pour mixture over the beef, making sure to cover the entire surface of the meat. Secure with cling wrap and marinate for 24 hours.
    • Remove beef from the marinade. Reserve excess liquid.
    • Cook beef in a preheated 180ºC oven for 20 to 30 minutes or until brown.
    • Cover beef with foil. Lower temperature to 130ºC. Cook beef for another 3 to 4 hours or until very tender.
    • Remove lechon baka from the oven. Let rest to cool down a bit.
    • Using your hands or forks, shred the meat and the fat. Set aside.
  2. Prepare the Lechon Baka Sauce

    15 minutes
    • Combine all ingredients, except the slurry, in a pot. Add reserved marinade.
    • Bring mixture to a boil and simmer for 5 to 10 minutes.
    • Add cornstarch slurry to thicken.
    • Add some sauce to the pulled roast beef. Set aside.
  3. Make the Creamy Atchara Dressing

    15 minutes
    • Mix all ingredients in bowl. Set aside until ready to use.
  4. Assemble the Sliders

    15 minutes
    • Toss crispy onions with Knorr Chicken Powder.
    • Toast or heat pandesal in a pan with butter.
    • Layer lettuce leaf, pulled lechon baka, and prepared dressing on one side of the pandesal.
    • Top with crispy onions and cover with the other side of pandesal. Secure the slider with a skewer. Repeat with remaining ingredients.
    Serve pulled lechon baka sliders with french fries, potato wedges, or kamote fries.
