Preparation

  1. Prepare the Basting Sauce

    15 minutes
    • In a small mixing bowl, combine all the ingredients and mix very well.
    • Use this baste when grilling the
      chorizo.
  2. Grill the Chorizo de Cebu

    20 minutes
    • Preheat the griller for 15 minutes then grill the chorizo.
    • While grilling, baste the chorizo de Cebu with the basting sauce prepared earlier. Continue grilling until the chorizo is cooked.
    • After grilling, remove the chorizo from the griller and slice it.
  3. Assemble the Chorizo de Cebu Pandesal Canapé

    10 minutes
    • Assemble the chorizo, egg, atchara, onions, and mayonnaise on top of the pandesal.
    • Garnish with spring onion and fried garlic.
