Manila’s Top Chefs Unveil New Dip-And-Dish Creations
4 of Philippines’ esteemed chefs come together to offer new dip-and-dish creations to inspire more chefs and cooks to showcase their own creativity.
Some of the country’s top names in the culinary industry – Chef Fernando Aracama, Chef Sau del Rosario, Chef Rob Pengson, and Chef Kalel Chan – team up with Unilever Food Solutions (UFS) to launch their limited edition dip-and-dish creations made with Lady’s Choice Real Mayonnaise.
These dishes are made exclusively available at their restaurants for a limited time only.

Chips with Smoked Bangus Dip
Garlic Parmesan Fries with Bull's Eye Dip

Chef Fern offers a creative take on the classic Bangus tinapa with his Smoked Bangus Dip (left) – a smooth and flavourful dip with umami-rich, premium smoked milkfish enriched with Lady’s Choice Mayonnaise, a touch of tart Greek yogurt, fresh lemon juice and zest, green onions and togarashi spice. The delicious dip pairs perfectly with a bowl of crispy taro and sweet potato chips, perfect for the adventurous palate, available at Aracama Manila.
For the perfect nightcap at Early Night?, Chef Fern is serving his Garlic Parmesan Fries with a special Bull's Eye Dip (right). This is a creamy, savoury dip with mayonnaise, flavoured with sweet roasted garlic in extra virgin olive oil. A punchy tomato jam with smoked chipotle peppers give the fun dip a warm contrast that works wonderfully when dipped with parmesan-tossed fries.
“These 2 dips are great on their own, but when you combine them it just becomes fantastic!” shares Chef Fern. “It’s an updated version of my childhood comfort food. With Lady’s Choice Real Mayonnaise at the delicious core of the dishes, it instantly gives dips its full, rich flavour with a smooth and creamy finish.”

Pampanga-native Chef Sau took inspiration from the abundance of seafood the Philippines is blessed with. “There is a surplus of sustainable seafood readily available in almost all markets around the country. Matched with the familiar favourite taste of Lady’s Choice Real Mayonnaise, the dish is already complete without having to overcomplicate it and add too much. It has the full, savoury flavour that diners will love,” said Chef Sau. As a delicious dish to end the summer season, he put together a mouth-watering Crab Cake with Spicy Sriracha Dip (left), and Salted Egg Yolk Prawn Rebosado with Calamansi Aligue Aioli (right).
Thai Soft Shell Crab with Asian Aioli

A potential crowd favourite that’s served at the hip and trendy James and Daughters restaurant, Chef Rob Pengson’s Thai Soft Shell Crab with Asian Aioli is infused with Thai herbs, tamarind glaze and a miso mayonnaise made with Lady’s Choice Real Mayonnaise. The fresh and aromatic blend of Asian spices gives the dish just the right balance of earthy flavours with a crunchy and tangy kick.
When asked what the inspiration behind his dish was, Chef Rob shared, “I’ve always loved Asian flavours because they’re so easy to play around with – you can put together a variety of dishes depending on what flavour you want to come out. The crunch of the soft-shell crab and the creaminess of mayo go so well with each other, it’s comforting and unintimidating. Thai flavours infused into the crab complement the dip, plus the miso adds umami flavour that gives it extra oomph.”

Fried Sinigang na Bangus with Salted Egg Mayonesa

Guaranteed to intrigue with its powerful and creative use of flavours, Raintree Restaurants’ Corporate Chef, Kalel Chan, has whipped up a Kang Kong Moringa Tinapa Melt Dip with Mushroom Chicharon Chips (left). The Kang Kong Moringa is pureed with cream cheese and Lady's Choice Mayonnaise, gratinated with cheddar cheese and served with a fried, lightly-coated oyster mushroom, making it perfect for the health-conscious snacker. Chef Kalel’s Fried Sinigang na Bangus with Salted Egg Mayonesa (right) is a colourful masterpiece made with egg dressing topped with tomato, red onions, spring onions, egg yolk and egg whites. It’s almost too pretty to eat!
“Compared to the traditional mayonesa, I made it more creative by adding salted egg dressing instead of plain mayo and a hint of sinigang flavour into the daing na bangus. I wanted to offer something a group of friends and family would enjoy, such as the mayonesa since it’s usually served in gatherings. Balancing it off with a healthier dish alternative makes the dining experience more guilt-free,” shared Chef Kalel.
